How long will a madiera
cake keep if used as a
tier in a wedding cake
To answer your question,
I did some checking
on-line using the search
engine
Google.com . I
found the following post
on the site
cake-links.com. I
hope that it answers
your question. Since
the cake contains 4
eggs, but no actual
Madeira wine, it should
keep for a few days.
"I make Madeira Cake 1
week before it is to be
eaten and quite often I
am told that the cake(s)
aren't actually eaten
for a couple of days
after that and I have
always been told that
they are fine and not
dry at all. As long as
you wrap the cake well
after it is cooled
(which will keep it from
drying out and cover it
with sugar paste as soon
as possible (giving you
enough time to let the
sugar paste dry for 24
hours) you should have
enough time to decorate
it without having to
rush!
If necessary, you can
also freeze Madeira cake
very successfully."
